How to Make a Burrata & Orange Salad
After a long weekend spent stuffing yourself with heavy holiday treats, Chef Matthew Grunwald shows you how to make a refreshing and light Burrata & Orange Salad! The balance of sweet and salty with a splash of tart vinaigrette will hit all the right notes on your palette! Full recipe below:
1) Cut & Segment 1 Orange
2) Add 2 Tbsp high quality Extra Virgin Olive Oil
3) Add 1/2 Tsp Freshly Cracked Black Pepper
4) Add 3 Tbsp White Wine Vinegar
5) Add 1 Tsp Honey
6) Season with 1/2 Tsp Salt
7) Whisk all ingredients
8) Tear & place 8 oz Burrata Cheese on plate
9) Add Seeds from 1 Pomegranate
10) Place Orange Segments on top of the Burrata
11) In a bowl, add a pinch of Baby Arugula to the Pomegranate Seeds
12) Season with Salt & Pepper
13) Add 1 Heaping Tbsp of the Vinaigrette
14) Mix until Arugula is well coated with the Vinaigrette
15) Add a few Shaved Slices of Parmigiano-Reggiano to the top
